Recipe - BrowniesWe love these brownies! They are a perfectly guiltless dessert, full of protein and super easy to make. If you are new to gluten-free baking, this recipe is one to keep on hand because they are delicious and do not require many ingredients. I make these so often that we change them up; sometimes I put chopped pecans or walnuts on top, sometimes chocolate frosting or, for a special treat, top them with homemade whipped cream and fresh berries.

Make them:

Preheat oven to 350

Line a 8×8 pan with parchment paper

(you can also use an 8 inch round cake pan, and then cut the brownies like pieces of pie)

Place all of the following ingredients in a food processor and mix well:

  • 1 1/2 cups of black beans (or 1 can drained and rinsed well)
  • 2 eggs
  • 1/3 cup oil (canola, coconut, or another of choice)
  • 1/2 cup sugar
  • 1 tbsp vanilla
  • 1/4 cup cocoa

Pour the mixture onto parchment lined pan. Add a 1/2 cup dairy-free chocolate chips to the mixture and stir them in. If you are topping them with chopped nuts, add them to the top of the brownies now.  Bake for 35 minutes – make sure the middle has set before you remove them from the oven.  If you want to do a chocolate layer on top, sprinkle chocolate chips on top immediately after removing the brownies from the oven and then spread the melted chocolate to cover.
